Cup Cakes Recipe

(makes approx. 12)

180g Butter
180g Caster Sugar
3 Large Eggs
180g Self Raising flour
Flavouring of choice

Method

  • Cream together the butter and sugar until very light and fluffy.
  • Beat the eggs and add gradually making sure that each addition is beaten in well.
  • Add flavouring and mix in.
  • Sieve the flour and fold into the mixture.
  • Divide between cupcake cases.
  • Bake at 180°C, 360°F, Gas 4 for approx. 20 mins.
  • Cool on a wire rack before decorating.
  • Dust with caster sugar to finish
