180g Caster Sugar
3 Large Eggs
180g Self Raising flour
Flavouring of choice
- Cream together the butter and sugar until very light and fluffy.
- Beat the eggs and add gradually making sure that each addition is beaten in well.
- Add flavouring and mix in.
- Sieve the flour and fold into the mixture.
- Divide between cupcake cases.
- Bake at 180°C, 360°F, Gas 4 for approx. 20 mins.
- Cool on a wire rack before decorating.
- Dust with caster sugar to finish
